IT SAUCE ROCOTO is made from Rocoto Peppers. Rocoto's grow in higher elevations in the Andes from Chile to Colombia, and in Central America, Mexico and Peru. They are the only pepper in the world to have black seeds and their thick walls resemble that of a bell pepper but pack much more heat (30,000-100,000 SHU on the Scoville scale). Rocoto peppers are unique with hints of apple. IT's a very bright, vinegar based sauce with balanced flavors of apple, honey, dijon, and warm cinnamon.
